In this paper, we researched on the technique of using high intensity pulsed electric field to aid the extraction of proanthocyanidins from grape seeds. Contrasting the experimental results, we showed that using this technique with water as solvent has the advantages of convenience, rapidness, simplicity, low cost, safety, time-saving, etc. Based on the experiments of univariate analysis and orthogonal optimization design, we determined the optimal conditions for extracting proanthocyanidins: high intensity pulsed electric field strength to be 25kV/cm, pulse count to be 24, material to solvent ratio to be 1:30, and pH value to be 3. Under these optimal conditions, the extraction amount is 9.32 times that by water immersion extraction, and is 2.46 times that by microwave aided extraction.
